🍲 1 cup red lentils
🍵 2 cups chicken broth
🧈 50g butter
🥕 1 carrot
🧅 1 onion
🥔 1 potato
🧄 2 cloves garlic
🍃 1 bay leaf
🌼 1 teaspoon turmeric
🍋 Lemon juice to taste
🍚 1 tablespoon flour
🫒 Olive oil as needed
🌶️ Aleppo pepper to taste
🧂 Salt and black pepper to taste

Preparation

1️⃣ Chop the onion, carrot, and potato.
2️⃣ In a pot, sauté the vegetables with butter for about 3 minutes. Then add the washed lentils along with the turmeric and flour, and sauté for a bit.
3️⃣ Add the bay leaf and chicken broth to the pot (you can also use boiling water or vegetable stock).
4️⃣ Cover the pot and let the lentils and vegetables cook thoroughly.
5️⃣ After cooking, remove the bay leaf from the pot and blend the mixture until smooth. Add salt, pepper, and fresh lemon juice to taste.
6️⃣ In a pan, heat some olive oil and Aleppo pepper over medium heat, stirring constantly to prevent the pepper from burning. Once the oil is hot, remove the pan from the heat.
7️⃣ Serve the soup in a bowl, garnished with olive oil and Aleppo pepper.
